
Warm Winter Salad Recipe

Some winters days call for delicious light meals. This delicious warm winter salad is just that. It’s fresh, vibrant, delicious and easy to make. A great dish full of fibre and nutrients. Enjoy with a glass of lemon water or Camellia’s Lemon Green Tea.
Ingredients:
- Large pack of Kale
- Large pack of Spinach
- 200g Mackerel flakes
- 1 Broccoli head
- 1 Garlic clove
- 1 lemon
- Salt
- Pepper
- 10g Camellia’s Lemon Green Tea
- 8tbsp Olive Oil
Method:
1. Infuse the lemon tea in the oil for 1 hour
2. Cut the broccoli into florets, then blanch alongside the kale and spinach in a bowl of hot water for 30 seconds, strain in a colander then leave aside
3. In a medium sized pan, turn the heat low, add a few tablespoons of the infused oil
4. Add the garlic, stir then add the vegetables and leave for a few minutes
5. Season with salt and pepper to taste
6. Add the mackerel flakes and mix together and remove from stove
7. Squeeze half a lemon and toss.
8. Drizzle a few more tablespoons of the infused oil
9. Sprinkle some pumpkin seeds once served
